ABOUT THE CUISINE

Egyptian cuisine is a vibrant mix of flavours, textures, and traditions, shaped by thousands of years of history. From the iconic Koshary – a comforting blend of rice, pasta, and lentils with zesty sauces – to Ta’amiya (broad bean falafel), each dish showcases fresh ingredients, herbs, and warming spices. Meals in Egypt are communal and celebratory, reflecting the country’s rich culture, hospitality, and love for bold, comforting flavours.

ABOUT THE CHEF

A message from chef Amal:

“My name is Amal and I am from Cairo in Egypt. Everyone has heard of ancient Egypt and the pyramids that have made it a tourist destination, but people may not know so much about our delicious cuisine. Egyptian people are happy and welcoming and love to cook and share food.

I started to cook when I was 10 with my mum and grandma. The first thing I made was Egyptian flatbread. I love to make Koshary, which is a mixture of types of pasta with rice and spices that is served with special sauces and is very popular in Egypt.

I used to run a restaurant in Cairo, mainly serving Koshary and falafel and other Egyptian specialities which I teach in my classes. I take every opportunity I can to cook. I volunteer in the community in Bristol where I cook traditional recipes that I have brought with me from my country and I look forward to sharing them with you.”
